Refreshing Tabouli Salad
Tabouli is a great source of enzymes, vitamins, minerals and fibre. Parsley supports healthy blood, digestion and liver function.
Ingredients:
Tabouli
3/4 cup quinoa (or millet)
1 1/2 cups water
2 cups fresh parsley, chopped
1/4 cup fresh mint, chopped
1 cucumber, finely diced
2 tomatoes, small, diced
4 green onions, finely chopped
1 clove garlic, finely diced
Dressing:
4 tbsp lemon juice, fresh-squeezed
6 tbsp olive oil
1 tsp black pepper (or to taste)
1 tsp sea salt
Instructions:
1.add quinoa and water to pot and cook over medium heat until water absorbed
2.remove from heat and allow to cool
3.add quinoa, parsley, mint, cucumber, tomatoes and garlic to large salad bowl
4.add lemon juice, olive oil, black pepper, and salt to the salad bowl
5.toss to thoroughly mix all ingredients
Makes four servings.
